Coborn’s plans to open a new supermarket called “Coborn’s Market and Table”, which will feature prominent local dining entrepreneurs from the Minneapolis area. The first store will open in March in Plymouth, Minnesota. The location will include “The Buttery Tin”, a bakery and café chain founded by Twin City restauranteur Alicia Hinze and it will feature freshly baked pastries and breakfast and lunch foods. The new store will also feature a food court called “The Global Table”, which will have three fast casual concepts designed by David Fhima, a chef who owns restaurants in the Twin Cities. Look for handcrafted burgers and gourmet Mexican and Italian food.
In-store dining is a centerpiece of Coborn’s new store concept. It reflects a growing trend among food retailers to attract shoppers looking for a restaurant experience when they buy groceries. The company’s President, Emily Coborn Wright, said in a statement that Coborn’s goal is to create a “vibrant, community focused shopping experience”.
Coborn’s runs 78 grocery stores in Minnesota, Michigan, Wisconsin, Illinois, North Dakota, and South Dakota under the Coborn’s, Cash Wise Foods, Marketplace Foods, Hornbacher’s, Kessler’s Food and Grocery and Sullivan Foods banners.
